Winter Warmth Fish Stew with Bear Creek “Darn Good Chili” mix
Wednesday, December 31, 2014
This is a great recipe that I stumbled upon when it was cold one winter and I had a few extra ingredients and wanted to eat something warm that was a stew. This is again from memory.
1 filet of Pollock or other white fish like cod (preferably wild caught). Available at Kroger.
1 Campbell’s can of cream of chicken. (This is the soup base)
1/2 to 3/4 cup of Bear Creek “Darn Good Chili” mix. You can find this at Walmart.
A few dashes of red cayenne powder.
2 tsp Butter
1 tsp White pepper (optional)
1 tsp Cumin
1-2 tsp minced Garlic
2 chopped garlic cloves
2-3 sprigs of dill
1/2 of a scallion (onion chives)
salt
Basically mix it all in and add a tiny dash of salt and cook on low to medium for about 15-18 minutes. Makes really good warm stew. Adjust quantities based on taste. Should make about 3-4 good bowls of wholesome hearty soup.
It says not to add water on the can but I usually just fill up the whole can with water one time to thin it out some and for more servings.
I cook with a lot of spices as cayenne is known for thermogenic properties to help those trying to lose weight and it tastes good.
